Marzipan

Marzipan 
is an almond paste made of ground almonds and sugar.
It is a wonderful confection to work with because the texture can be adjusted for a variety of uses. The amount of sugar added to the paste can make it more or less pliable like dough. Therefore, it can be rolled very thin to cover special occasion cakes or can be molded with fine details into shapes like fruits, vegetables or figurines. The light color of the paste is beneficial to adding a wide range of color.
For instance teuscher uses natural extract of beet and spinach juice to color its marzipan.
Did you know … 
there is a lot of debate among food historians about the origins of the Marzipan ? There is a rich Marzipan history in quite a few countries along with variations on translation of the name due to language and cultural influence.
Marzipan has been found to be served in the middle ages to nobility at the end of dinner courses and there are suggestions of an almond paste produced over one thousand years ago. Its journey started in the Far East and made its way to Europe.
The Marzipan made in Lubeck, Germany along with “Mazapan” from Toledo, Spain are notable for their special geographical protection status.
Finally higher quality marzipan is known to have a higher ratio of almonds to sugar to produce a more flavorful confection.
The teuscher Marzipan is made this way with a ratio of 2/3 of Almonds to 1/3 sugar.

Gianduia

Gianduja was created around the 19th century in the Piedmont region of Turin, Italy?   Piedmont is a major hazelnut  producer and the hazelnuts grown there have a geographical protection akin to fine wine and cheese.
 
The hazelnuts from that area are highly renowned for their superb aroma and flavor when roasted.  
They also have a longer shelf life 
which makes them an excellent addition to chocolate confections such as Gianduja.
 
Gianduja, sometimes called a fine praline or smooth nut paste is a filling made of
finely ground nuts mixed with chocolate and sugar.  This creates a smooth texture
with a pronounced nutty flavor.  The Teuscher Gianduja is grinned in a triple mill machine without any added oil or fat.  Although the hazelnut is the primary nut 
used to make Gianduja, other nuts such as walnuts, or almonds can be blended as well to create wonderful combinations of flavors.

Did you know….

The inspiration for the champagne truffle came to Teuscher senior in a dream?  From the very beginning of building his business, there was an emphasis on the finest raw materials and ingredients from imported  Sicilian oranges to the best milk and butter from Swiss cows.  
 
However, Mr. Teuscher wanted to take the experience of his fine confections beyond the ingredients  and create something very special for his clients.  
 
One evening before retiring to bed after a long day of chocolate making, his eyes fell upon a cabinet that contained two champagne buckets that he kept for many years as a memento from his hometown.  He dreamed of Champagne truffles that night and the very next morning he immediately started working on a recipe to turn his dream into a reality.  
 
His wife was given the very first piece hand made by Mr. Teuscher to try: 
A delicate blend of fresh cream, butter and chocolate with a Dom Perignon 
Champagne cream center, dusted with confectioner’s sugar.  
 
Sixty- four years later, Mr. Teuscher’s magical creation is still the favorite of our clients to give for an extra special occasion.  If there is no specific occasion, one is instantly created, the moment a Champagne truffle enters the room.

Dom Perrignon Champagne Truffles

Did you know … chocolate truffles were named for their
resemblance to the truffle mushroom?  The ganache of the first 
truffle was formed into a rounded shape and rolled in cocoa
powder.  The look of the truffle with the cocoa dusting 
was similar to the truffle mushroom pulled from the earth,
hence the inspiration for the name.  
 
Truffle mushrooms grow near the roots of oak and hazelnut trees and are so
highly prized for their aroma and flavor they can sell for hundreds or even
thousands of dollars per pound.  The Black Perigord truffle from France and
the White Alba truffle from the Piedmont area in Italy are considered the 
finest in the world.  These special mushrooms are used sparingly for their 
intense unique earthy flavor to elevate the dining experience.
 
Legend has it the chocolate truffle was created around Christmas in the
late 1800′s in France.  The main component of a truffle is the ganache filling
which is a mixture of chocolate and cream.  The diehard chocolate truffle 
purist swoons over the original chocolate in chocolate combination.  
However, truffles can be infused with a myriad of flavors that seem to have
no limits beyond the imagination.
 
Whether it is a mushroom or a chocolate treat, the mere whisper of the
